Magnificent Mouthwatering Meatloaf

Magnificent Mouthwatering Meatloaf, Garlic Mashed Potatoes, and Broccoli

There are times in a Yenta’s life that she needs comfort food, and this week is one of those weeks. Retirement Yenta is home from Miami Beach, and there is a nip in the air that signals that fall is here and winter is on its way. With this in mind, your dear Yenta has her apron on and is back in the kitchen, cooking up a storm. Today’s recipe is for a magnificent, mouthwatering meatloaf that is this Yenta’s favorite comfort food. This dish is oh-so-yummy that RY’s family asks for it on a regular basis. Garlic Mashed Potatoes and Broccoli are great sides for this main course mainstay.

Ingredients: 

2 pounds ground beef
3 small carrots diced
2 stalks celery, diced
1 medium onion, diced
2 eggs
Dash of Worcestershire Sauce
Dash of Hot Paprika
Dash of Mrs. Dash (extra spicy)
Dash of Black Pepper
3 teaspoons of Bragg Liquid Amino
Dash of Salt
2 cups of breadcrumbs (seasoned)
6 tablespoons of vinegar
4 tablespoons of Dijon mustard
6 tablespoons of brown sugar
4 cans (8oz) of tomato sauce

Preparation

Preheat the oven to 350

In a large bowl, combine the ground beef, eggs, salt, pepper, breadcrumbs, paprika, Mrs. Dash, liquid amino, and Worcestershire sauce. Place in a baking dish and bake for 1 hour.

Near the end of the first hour of baking, sauté carrots, celery, and onions in a little olive oil. Once the carrots are slightly softened (approximately 4-5 minutes), place in a bowl and mix with tomato sauce, vinegar, brown sugar, and Dijon mustard. Apply the sauce to the meatloaf and bake another hour.
